An engine torque control method for a hybrid vehicle specifically comprises the steps that working condition recognition is conducted, specifically, when a stepped accelerator pedal is released, a fast torque triggering condition indicating that the torque reduction capacity of a generator is insufficient is recognized; performing quick torque intervention: when the quick torque triggering condition is met, performing intervention on the actual torque of the engine by using the engine quick torque according to the target quick torque value; and the quick torque quits, and when the quick torque quitting condition is met, intervention of the quick torque of the engine is stopped. The engine torque control method may improve engine response characteristics of a hybrid vehicle. The invention further relates to an engine torque control device for the hybrid vehicle.
