The invention belongs to the field of aviation, and relates to a controllable heat dissipation structure and method for a multi-cold-source series-parallel fluid system. A heat dissipation mode and a heat dissipation path can be selected according to opportunity and temperature, and heat dissipation efficiency is improved. The method comprises the steps that in the subsonic flight stage of takeoff, cruising and homeward voyage, cold air outside the aircraft serves as a standby cold source, and a skin radiator is adopted for conducting heat dissipation on lubricating oil, hydraulic oil and fuel oil; and when the aircraft enters a supersonic flight stage, the skin radiator is closed, and lubricating oil and hydraulic oil are cooled through fuel oil. A fuel oil cooling and skin radiator cooling mode is adopted, different cold sources are adopted according to different flight stages and temperature conditions to comprehensively control cooling modes and cooling ways of hydraulic and lubricating oil fluid systems and the like, the cold sources are provided for on-board heat loads, and on-board cooling capacity is utilized to the maximum extent.
