The invention discloses a power-off control method of an electric vehicle, a controller and the electric vehicle, and realizes intelligentization of high-voltage power-off, so that the energy consumption of the vehicle and the probability of safety accidents are reduced. The method comprises the following steps: acquiring vehicle monitoring information when the electric vehicle is in a starting state; according to the vehicle monitoring information, whether a driver leaves a seat or not is judged, if yes, a high-voltage power-off link in the whole vehicle power-off process is triggered, and the vehicle is triggered to send out prompt information when high-voltage power-off is completed; judging whether feedback information which is given by the driver and meets preset requirements is received within first preset time or not, and if yes, triggering the vehicle to recover high-voltage power-on; and if not, the vehicle is triggered to continue to execute the whole vehicle power-off process until the whole process is executed.
