The invention discloses a mechanized production process of fried rice, which comprises the following steps: 1) selecting plump broom corn millet, and manually or mechanically removing sand, soil, impurities and heterogeneity grains in the broom corn millet to obtain pure broom corn millet for later use; (2) putting the broom corn millet obtained in the step (1) into a container, soaking the broom corn millet in tap water or purified water at the water temperature of 5-35 DEG C for 10-24 hours, fishing out the soaked broom corn millet from the water, putting the broom corn millet on a screen or a container, and airing the broom corn millet at the room temperature of 5-35 DEG C for 1-2 hours; (3) feeding the soaked broom corn millet into an electric frying pan, stir-frying while heating by the electric frying pan, and cooling to 50 DEG C when the temperature reaches 100 DEG C; and discharging the broom corn millet obtained in the step (3) into a heat preservation tank for covering, and then adopting a fan to supply air for drying to obtain the fluffy fried rice. According to the rice frying process, manual work is replaced by mechanization, the productivity can be effectively improved, and the effects of controllable temperature, controllable moisture, uniform cooking, prolonged production period and reduction of manual airing are achieved in the production process.
本发明公开了一种机械化生产炒米工艺,包括以下步骤:1)选颗粒饱满的糜子由人工或机械去掉糜子中的沙、土、杂质和异种粮,得纯净的糜子备用;2)将步骤1)得到的糜子,置于容器用自来水或纯净水在水温5‑35℃浸泡10‑24小时,将浸泡后的糜子从水中捞出置于筛网上或容器上,在室温5‑35℃晾晒1‑2小时;3)将浸泡好的糜子进料到电炒锅,电炒锅在加温的同时进行翻炒,当温度达到100度开始降温至50度;将步骤3)得到的糜子出料到保温罐里闷捂后采用风机送风干燥得到蓬松的炒米。炒米工艺通过机械化代替人工,可以有效的提高产能,在生产过程中做到温度可控、水分可控、生熟均匀、延长生产周期同时减少人工晾晒的效果。
