The invention discloses a hybrid electric vehicle capable of reducing an engine entering a full-load driving mode and an engine control method thereof. The method includes determining whether a depression degree of an accelerator pedal (APS) is equal to or greater than a reference value set as a condition for an engine to enter a full-load driving mode; determining a partial load torque corresponding to a maximum torque of the engine in the partial load driving mode and a motor torque corresponding to a maximum torque of the motor when the depression degree of the accelerator pedal is equal to or greater than a reference value; comparing a sum of the partial load torque and the motor torque to a driver required torque; and controlling the engine to be in a full-load driving mode or a partial-load driving mode according to a comparison result.
