The invention discloses a truck fork height control method and device, and a truck. The method is applied to the truck , the truck comprising a truck body, a hydraulic lifting system and a fork, wherein a lifting selection switch and a goods detection device are arranged on the truck body. The method comprises the following steps: entering an automatic lifting process; in an automatic lifting process, when the lifting selection switch is in an ascending state, judging whether the goods detection device detects goods at a set height or not, if yes, controlling the hydraulic lifting system to stop running, and otherwise, controlling the hydraulic lifting system to drive the fork to ascend after preset buffering duration; and in the automatic lifting process, when the lifting selection switchis in a descending state, judging whether the goods detection device detects the goods at the set height or not, if yes, controlling the hydraulic lifting system to drive the fork to descend after the preset buffering duration, and otherwise, controlling the hydraulic lifting system to stop running. According to the method, the labor intensity of workers can be reduced.
