The invention relates to the technical field of fuel cell engine control, in particular to an anode control method and device of a fuel cell engine and a vehicle. The method comprises the steps that the actual temperature of the current environment of the fuel cell engine is collected; when the actual temperature is larger than or equal to a first preset temperature threshold value and smaller than or equal to a second preset temperature threshold value, the current power of the fuel cell engine is obtained; and according to the current power of the engine and/or the target humidity and the current humidity of the galvanic pile, generating a corresponding first hydrogen discharging action for discharging the anode waste gas. Therefore, the problems that the performance and the service life of the fuel cell are affected due to the fact that the water segregator cannot be adjusted according to different working conditions and the requirement of the stack membrane on humidity under different working conditions is difficult to meet in the related technology are solved.
