The invention discloses a method for obtaining the bird cutting quality in a bird strike test and an engine bird strike test system. The method for obtaining the bird cutting quality in the bird strike test comprises the steps that S1, a plurality of first induction pieces are arranged on a simulated bird bomb; s2, the simulated bird bomb is launched, and the space coordinates of the multiple first induction pieces at the moment that the simulated bird bomb is cut by the blade are captured; and S3, calculating the bird cutting volume of the cut simulated bird bomb to obtain the bird cutting quality. The engine bird impact test system comprises a blade, a bird bomb launching device, a position detection device and an information processing device. According to the method for obtaining the bird cutting quality in the bird impact test and the engine bird impact test system, the first induction part is arranged on the simulated bird bomb, the position detection device is arranged to detect the position information of the simulated bird bomb, and the bird cutting volume of the blade impacted by the simulated bird bomb is obtained by detecting the position of the first induction part in real time; and calculating the bird cutting mass according to the bird cutting volume.
