The invention relates to a brake device, and discloses a hydraulic brake system and an engineering vehicle, the hydraulic brake system comprises an oil inlet path and two brake paths, and the oil inlet path is sequentially provided with a prefill valve and an energy storage device; the brake oil way comprises a manual brake oil way provided with a mechanical brake valve and an electric control brake oil way provided with a traveling electric control brake valve, one end of the manual brake oil way and one end of the electric control brake oil way are both connected with the oil inlet oil way, and the other end of the manual brake oil way is connected with a brake through a shuttle valve. And the other end of the electric control brake oil way is connected with the brake through the shuttle valve, so that the manual brake oil way or the electric control brake oil way is selectively communicated with the brake through the shuttle valve. The braking function during manual operation can be achieved, the automatic braking function during unmanned driving can also be achieved, the braking synchronism of two paths can be guaranteed, and the dangers such as rollover caused by failure of one side when the left braking and the right braking are independent are avoided.
