A continuous enzymatic low-temperature cooking/liquefaction process for use in the production of ethanol from wheat flour is being presented. The process is carried out at 86 Cel in a continuous stirred tank reactor (CSTR) followed by a plug-flow tube reactor (PFR). The process has been tested in pilot scale with different types of wheat and various dosages of alpha-amylase (Termamyl). The feed slurry dry substance level was varied between 25 and 35 % w/w, and the mash viscosities after the CSTR and PFR stages were recorded. The liquefied mash was saccharified with amyloglucosidase (SAN) and simultaneously fermented with yeast (Sacc. cerev.) in a laboratory scale batch process. Satisfactory ethanol yields were obtained (89 % of theoretical). The effect of cellulase, hemi-cellulase, beta-glucanase and cellobiase on ethanol yield and stillage viscosity was investigated. The alcohol yield could be increased and the viscosity of the stillage could be slightly decreased.
